What makes Hong Kong milk tea so different from regular milk tea?

Most milk teas, or nai chas, from New York to San Francisco to Boston, are brewed to mimic the Hong Kong-style milk tea, which is known for being very dark, silky, and aromatic.

So we went to one of the most well-known Hong Kong milk tea master classes to learn about how this iconic beverage is made—it’s actually a recipe that brings a lot of different Asian culinary fusions into one cup.
